I want to call these delicious delicacies Monkey Balls but am worried that you might be a little put off…
Stay with me and imagine sweet and sticky but also light and spicy.
I have used turkey mince because I think it makes for lighter balls (watch it!) but beef or pork or a mixture are also excellent.

5oog minced meat

small red or orange pepper – de seeded

bunch of spring onions, chopped

lump of ginger, roughly chopped

1 red chilli – de seeded if you like

2 cloves garlic

Brown sugar or palm sugar

rice or wine vinegar

soy sauce

salt and pepper

Throw the meat, half of the spring onions, red pepper, garlic, chilli and ginger into a food mixer and blend with a dash of soy, vinegar and a sprinkling of sugar. Season but go easy on the salt because of the soy sauce.

Form into ping-pong sized balls. Fry these in sunflower oil until browned. Add a little water to the pan to make a sauce plus about 3 tblsp soy sauce, 1 tblsp vinegar, 2 tsp sugar and let it bubble under a lid until thoroughly hot and cooked through.
