A mini baking workshop here at Bank Cottage for two delightful youngsters. They both love to bake but wanted some recipes that they could manage to replicate at home with confidence.

 

Classic Chocolate Cake

 

275g salted butter, softened

275g light brown sugar

75g cocoa

2 caps of vanilla

4 large eggs

225g plain flour

3 tsp baking powder

150ml cooled black coffee

 

Icing

225g salted butter

50g cocoa

2 caps vanilla

325g icing sugar, sifted

2tsp instant coffee, dissolved in 2 tsp hot water

2 x 20cm tins

 

Heat oven to 160 degrees.  Grease and line tins.

Beat butter with sugar until light and fluffy. Stir in the cocoa and vanilla. Add eggs one at a time.

Keep beating and add the flour and baking powder bit at a time.

Add the cold coffee and fold in.

Divide the batter between the tins and bake for 30 minutes. Leave to cool in the tins.

To make the icing, beat the butter until smooth then stir in the cocoa and vanilla.

Beat in the icing sugar a third at a time. Add the coffee. You could add a dash of milk to get it to the right consistency.

Sandwich the cake layers and spread a thin layer around the cake. Chill and then repeat the outer icing.
