About the ingredients

It is important to be able to tell guests that the meat they are eating is reared locally, the fruit and veg is often picked that day from my garden or allotment and the cheese is made a few miles down the road.

All the poultry, eggs and game are free range and I am always able to state their origin.

For specialist ingredients which would otherwise be difficult to source locally I am prepared to travel to get the best. As far as supermarkets are concerned, I don’t use them much but where possible I support their fair-trade and organic ranges and of course it makes sense to buy their locally produced ranges of dairy products.
